fall fruit and feta salad

(my own twist on Taste of Home's Fresh Apple and Pear Salad)

3 apples, chopped into bite-sized pieces
3 pears, chopped into bite-sized pieces
2 medium to large cucumbers, in bite-sized slices
2 Tbsp red onion, minced
1/3 cup feta cheese
1/3 cup chopped walnuts

1/2 cup apple juice
3 Tbsp apple cider vinegar
1 1/2 Tbsp mustard
1/4 cup brown sugar
2 Tbsp olive oil
2 Tbsp snipped fresh dill
salt and pepper to taste

Mix dressing first in Tupperware gravy shaker. Then mix other ingredients in large bowl, reserving cheese and nuts for topping. Quickly stir dressing into fresh fruit and veggies before they have a chance to get brown. Pronounced a grand success at our house!

salsa from Dena



"I thought I’d send this salsa thing I made to serve with Mexican food since your mango recipe reminded me. Just chop and stir.
The salsa thing is, begin with red onion, cilantro, salt, and lime, aka the Pioneer Woman. I think tomato is a basic for her too. Then just add whatever you find in the fridge.

This salad majored in cabbage and cilantro.

Cabbage
Black beans
Mango, the red and the yellow ones
Lime juice
Leftover corn from Sunday
Tomato
jalapeno
Cilantro
Salt
Avocado
Red onion

I haven't tried it yet, but it's right at the top of my to-try list. Basically anything Mexican and cilantro speaks to me and I can't resist! BTW someone told Dena they thought it was a salad; so maybe any way of eating it is perfect.

my latest spinach salad

In a bowl put a few handfuls of baby spinach. Add:
3 boiled eggs, sliced
1/2 pkg bacon, fried crisp and crumbled
1 cup mushrooms
handful of crumbled feta cheese
1/2 cup toasted almonds
1/2 cup frozen peas
raspberries for garnish

DRESSING:
blend the following ingredients with handheld blender:
1 Tbsp oil
1/4 red/purple onion
few drops garlic oil from Watkins
1/3 cup white wine vinegar
1/3 cup Dijon mustard
1/3 cup maple syrup or honey
salt and pepper to taste

Instant success!!!!

strawberry spinach salad (slightly revised)

...from Fran
Fill a bowl with fresh spinach
sliced strawberries
sliced mushrooms
crumbled feta cheese
bacon bits (optional, but not really)
little bit of coconut
walnuts or pecans or sliced almonds

DRESSING:
1/2 cup oil
3 TBSP Worcestershire sauce
1/4 cup vinegar
1 1/2 tsp minced red onion (or more)
2 TBSP sesame seeds
2 TBSP poppy seeds
1/3 cup sugar
1/4 tsp paprika

Shake dressing together and pour as much as you like over salad right before eating. We plan to eat this a lot all summer!

scrumptious apple salad

SCRUMPTIOUS APPLE SALAD

Mix together:
1/4 cup cream
1/4 cup mayo
1 Tbsp sugar
2 tsp lemon juice
1/4 tsp salt
1/2 tsp (or more) poppy seed
raisins to taste

Add:
2 diced red delicious apples (I use whatever is in the fridge)
2 diced golden delicious apples (same as above)
1 cup pecans (I like to toast these)
1 cup sliced celery
6 large lettuce leaves (the ripply kind to layer on bottom of plate and pile apple salad on top of.)

My sis, Doreen, sent me this recipe after feeding us this delicious salad at Christmas.
